dc.description.abstract	Starches of different species of tubers dioscoreas (D. remotiflora and D. sparsiflora) in the region Cienega Chapala was isolated and some physical and chemical properties evaluated. The yield of starch range from 22.10-35.79% dry weight, this range higher than those reported for D. esculenta and D. alata (12.2-18.0%) respectively. There results showed variations in the content of fat, acid hydrolysis, Solubility, swelling power and water absorption capacity between the starches of both species. In addition, showed a high phosphorus content (0.49-0.32%). The results show that these starches can be used in the food industry because they had good interaction with water to heat-processed in cold storage.	es
